Rights-holder(s): Unless otherwise stated, Copyright 2026 University of Leeds Publication Year: 2026 Description: This dataset contains experimental data characterising the structural, conformational, rheological, and lubrication properties of CaPoBio, a calcium-mediated self-assembly comprising potato protein (PoP), xanthan gum (XG), and calcium chloride (CaCl₂).The dataset includes Raman spectroscopy, Circular dichroism and intrinsic fluorescence spectroscopy data (providing insights into protein conformational changes during self-assembly). Rheological and tribological measurements assess the effects of calcium concentration, thermal treatment, and XG incorporation on viscosity, shear-thinning behaviour, and lubrication performance. The friction measurements examine pH-dependent structural changes and their influence on lubrication behaviour. Overall, the dataset provides a comprehensive experimental characterisation of CaPoBio, highlighting the relationships between its molecular interactions, microstructural organisation, flow properties, and lubrication performance under varying formulation conditions.
