1. ABOUT THE DATASET -------------------- Title:Sensory attribute ratings of chocolate spreads Creator(s): Victoria Gill[1], Peter Ho[2], Nnenna Ariakpomu[3] and Melvin Holmes[4] Organisation(s): University of Leeds Rights-holder(s):Unless otherwise stated, Copyright 2024 University of Leeds Publication Year:2024 Description: The dataset contains sensory attribute intensity ratings on three samples of orange-flavoured chocolate spreads purchased from three UK commercial brands. The samples were evaluated by two separate panels, one trained panel (n=7) and the other untrained (n=24). Each panel rated the intensities of five attributes- orange flavour, sweetness, cocoa flavour, milky flavour and saltiness on an 8-point categorical scale (from 0-7). RedJade sensory software was used for data collection between November and December 2022. CONTENTS ----------- For each file listed, the spreadsheet has two tabs labelled Key and Data. The Data tab contains the data, while a description for each column is provided in the Key tab. File naming convention ---------------------- Sample product_panel_type of sensory test/data_data collection year.file extension File listing ------------ Choc_spread_Trainedp_AR_2022.xls (Trained panel attribute intensity ratings) Choc_spread_Untrainedp_AR_2022.xls (Untrained panel attribute intensity ratings) README_Ariakpomu-etal_2024_1.txt (Dataset description) List of Abbreviations --------------------- Choc_spread (Chocoloate spread) Trainep (Trained panel) Untrainedp (Untrained panel) AR (Attribute intensity Ratings) 5. METHODS ---------- - Data was collected through sensory evaluation surveys using Redjade Sensory software (https://redjade.net/) - Attribute intensity rating test was used to evaluate the samples using an 8-point categorical scale (0-7) with labels adapted from the Labelled Magnitude (LMS) Scale.
